Olympic Food Challenge – The Gambia – Chicken Yassa

The Gambia is a country in West Africa, it gained independence from the UK in 1965.

They have sent athletes to the Olympics since 1984. This year they sent 2 competitors to compete in the athletics; Suwaibou Sanneh and Saruba Colley. Both competed in the 100m with Suwaibou making it to the semi finals. They have yet to win a medal.

Also having looked into the Paralympics, The Gambia have never competed, despite having quite a large number of athletes.

Anyway, back to the food. I discovered that there are four traditional dishes so we opted for the most appealing one from there; Chicken Yassa.

I searched and found quite a lot of recipes, but the one that caught my eye was this one over on gastronomic.ie so Dave followed that one.

 


As with all the dishes we’ve cooked for the challenge, I really enjoyed it. It makes me want to start exploring other foods more. I mean, we eat a wide range of foods, but we dont eat from less well known countries.
