The Olympic Food Challenge wasn’t completed by the end of the Olympics, so Ewan has redistributed some of the countries and we’re cooking an extra two during the Paralympics. One of the countries is Somalia.
Somalia have competed in the Olympics since 1972 and they sent two competitors to the London 2012 games.
They have yet to win a medal.
So, for tonights dish, we had a wealth of recipes to choose from over on http://www.mysomalifood.com and we opted for ‘Iskudeh Karis’ – like a chicken pilaf. Dave followed the recipe (albeit scaled down for just 4 chicken thighs) as described here
It was delicious, definitely one that we’ll have again!
