Olympic Food Challenge – Barbados – Curried Pork Chops and Rice

Barbados first competed in the 1968 olympics and have sent six athletes to compete in London, all of them male.

They’re competing in swimming, athletes and judo. As of 9th August, there have been no medals awarded.

Apparently Barbados has quite a lot of influence in its cuisine from American (macaroni pie being a favourite here too). The national dish is Cornmeal cou cou, which is cornmeal with okra. Neither of us fancied this so we chose Curried pork chops.

Curried Pork Chops
Ingredients:
Long-Grain Rice
Olive Oil
Raisins
Ground Cumin
Chicken Broth
Water
Curry Powder
Cinnamon
Chilli Powder
Pork Chops

We are eating so much rice! It’s rice with everything! Thankfully it’s not all plain rice tho’, this was nice with raisins in.
