Pancakes from How to Eat by Nigella Lawson

I recently signed up to eatyourbooks.com. I dutifully added all our books, which turned out to be 135 cookbooks and over 19000 recipes! I used the search function for ‘pancakes’……

Amazingly enough there were 33 results! To be fair, not many of them met the criteria of being a basic pancake recipe. However, the last in the search was Nigella’s recipe in the How to Eat book, so I opted for those.

The recipe was simple, egg, milk, 00 flour and a pinch of salt. Put the batter to one side for at least 30 minutes, but it will be ok overnight.

An interesting tip in the book (and I have heard this before), is not to use a non-stick frying pan. We dont have a non-stick one though, so we had to – this in itself is amazing as we have about 15 different frying pans! We used a ladle to put the batter in, and it was about ¾ full.

When I was growing up, we had savoury pancakes. We used to have things like corned beef hash served with pancakes. Nowadays, I opt for a simple ham and cheese.

This recipe made 8 pancakes. It was reliable and I’d definitely use it again. All the pancakes were great. I’m wondering if this is due to the 00 flour as they were light and cooked well.
