Sooooo, the World Cup has started. I have no interest in the football, but I’m very excited to be starting our World Cup Food Challenge. We have been allocated Group F.
We started with Iran. The word Khoresh means ‘stew’ in Persian, and we opted for a Persian Aubergine Stew. We had made a similar recipe a few weeks back from the James Ramdsen cookbook.

I didn’t cook this, Dave did. But it basically went a little like this;
Fry the potatoes and put to one side, fry the aubergines and put to one side. Fry the onion then add the turmeric, tomato puree, dried limes and boiling water then add the potatoes and aubergines and cook until the potatoes are cooked through.
The finished dish was lovely and if you used tinned aubergines, it’s a meal you can throw together when you have nothing in the house.
